Dairy Free and Gluten Free Almond Muffins

Almond muffins are probably one of the very first gluten free and no added fat baking recipes I fell in love with. They are super easy to make and taste great. I enjoy them as a snack, a breakfast treat or even a dessert. Baking sweet muffins that I could actually eat, that followed a diet that was both dairy free and gluten free without adding any fats to the actual dough became possible with this recipe.

I love these almond muffins because they are loaded with protein instead of hi-glycemic carbohydrates and the fats in almonds are healthy fats too. As I engage in a lot of exercise I’m always on a lookout for protein rich snacks to help my tissue repair after exercising. As I follow a largely plant based diet I am also interested in protein rich snacks to supplement my meals. read more

Indian Rotis – Gluten Free Flat Bread OMS Recipe – While there is no link between MS and gluten or wheat sensitivity, I still provide a gluten free option to most of my recipes for the simple reason that I personally feel better when avoiding gluten. When eating gluten I tend to feel bloated and generally uncomfortable. My doctor suggested to me to omit gluten to see if I feel better. I did and so it’s a simple choice for me.

As well as making this personal choice I also think that many people who suffer from gluten sensitivity or celiac disease will enjoy the OMS low saturated fats diet. So I try to make my recipes as inclusive as possible and try to cater not only for people with MS but other people who are on a non-dairy or gluten free diet too. Vegan Tofu and Cashew Nut Whipped Cream a Great Alternative to Dairy Cream

This Vegan and cashew nut whipped cream is a tasty great a lternative for dairy whipped or the vegan whipped creams that are available to buy commercially. It is made from tofu, cashew nuts and soya milk. While it doesn’t have the same super stiff consistency as any dairy cream, you can whip it quite fluffy and it makes a lovely topping for cakes, crumbles and other fruit deserts. I also use it for creamy main dishes that want for that extra creamy taste. It’s one of these essential condiments in my kitchen since I switched to the diet of the OMS program. Healthy food is food made from healthy, fresh ingredients and cooked in a manner that preserves the nutrients and healthy components of the food. You can have really healthy ingredients but if you let’s say fry them to a crisp, you will remove not only healthy components like vitamins etc. you might even turn them into something very unhealthy by altering the chemical composition or adding unhealthy trans-fats, too much salt, sugar or refined carbohydrates.

Healthy Fish

Fish  and seafood is a wonderful ingredients for all kinds of simple as well as fancy dinners. Sourcing fresh fish and seafood can be a bit of a challenge if you don’t live near the sea. The best place to buy fish is from a fish monger. Other good place to find fresh fish is at your local market. You are most likely to find fish that is fresh and in season in those two places. Local means it hasn’t traveled for hundreds of miles and/or days to get to you. If you are lucky enough to be living at the sea you might be able to buy your fish directly off the fishing boats in your local harbour. If that isn’t available to you, you can also buy frozen fish. Fish is best defrosted at room temperature and cooked as soon as it has thawed. read more
