Healthy Vegan Recipes:
On this page you will find a list of all the blog posts about buying, preparing and eating vegan and the related recipes I’ve posted on the blog. I follow a low-saturated fat diet, don’t eat trans-fats and avoid omega 6 fats as well. I prepare my food with either cold pressed oils and mostly omega 3 oils. I try avoiding heating oils during cooking so that they maintain their healthy characteristics and don’t change into unhealthy fats due to overheating them. If I add fats to any meal it is often after the cooking process is completed. This applies in particular to flaxseed oil which shouldn’t be heated at all. If I cook with oil I try to keep the temperature below 180˚C/ 356˚F. Also I tend to add some water or other liquid to the oil when cooking to ensure it stays at a lower temperature during the cooking process. All the recipes you will find here are following the guidelines of the OMS Program and are part of the Lotte Wild OMS cookbook series but obviously this kind of healthy eating isn’t just for people who have MS. Eating healthy like this is good for anyone and also helps people who suffer from coronary heart disease, high blood pressure and other inflammatory auto immune diseases like rheumatoid arthritis and more.
As you might have discovered already I am not a strict vegan. I do eat fish occasionally as it contains very high levels of omega 3. As a matter of fact I will be selling a cookbook all about seafood and fish in the very near future. However, the majority of my recipes are vegan and I will be publishing a lot more cookbooks on strictly vegan cooking.
